(Base Recipe from the “Pillsbury Kitchen’s Family Cookbook”)
1 Teaspoon Soda
1/2 Teaspoon Salt
1/4 Teaspoon Baking Powder
1 Cup All Purpose Flour
1 Cup Almond Flour
1 Cup Sugar (or ½ Cup Sugar, 1/8 Brown Sugar, 1/4 Honey, And 1/8 Date Syrup)
1-1/4 Cups (3 Medium) Mashed Bananas
1/2 Cup Butter (or ¼ Butter, ¼ Oil)
1/4 Cup Milk (I used Oat Milk)
1 Teaspoon Vanilla
2 Eggs
2/3 Cup Chopped Nuts (I Used Candied Walnuts)
Optional Mix-Ins (To Taste):
Cinnamon (Dash)
Nutmeg (Dash)
Chocolate Chips (Handful)
Dried Apple Chunks Rehydrated (Has been warn soaked in water for at least 15 minutes)
½ Teaspoon Almond Bakery Emulsion
Preheat oven to 350°F. Grease/use cooking spray on 9x5 loaf pan.
In large bowl, blend first 6 ingredients; mix with spatula until well combined. Fold in remaining ingredients mixed until well combined. Add mix-ins now if you want throughout bread.
Pour batter into prepared pan. Add-in (poke-in) mix-ins now if you are doing half and half.
Bake at 350°F. for 40 to 60 minutes or until toothpick inserted in center comes out clean.
Cool 10-45 minutes; remove from pan.
